These vegan Amaretto Chocolate Truffles are divinely good. Very delicate, rich chocolate taste in combination with Amaretto flavor evoke feelings of incredible pleasure and excitement. Chocolate Amaretto Truffles

Chocolate Amaretto Truffles

Ingredients

Use dark chocolate with a minimum of 70-75% cacao to get a very intense chocolate truffle. Choose high-quality and delicious chocolate – it affects the final result. Don’t substitute dark chocolate for milk or white chocolate, as the texture will be thin. For this recipe, the percentage of cacao is very important.

For this recipe, you’ll need full-fat coconut milk in cans. We don’t recommend to substitute it with almond or other low-fat plant-based milk. But if you need to do this, in that case, increase the amount of chocolate to 6 oz.

If you don’t want to use Amaretto liquor, you may use a bitter almond extract instead of Amaretto to bring the truffles that flavor.

How to coat truffles

To coat the truffles with chocolate glaze, melt the chocolate and coconut oil, using a double boiler. If you don’t have a real double boiler, make it using a pan and heatproof bowl. Add finely chopped chocolate to the bowl. The bowl should be able to fit in the pan without reaching the bottom. Pour some water into the pan, place over medium heat, and bring to a gentle simmer. Then place the bowl into the pan. Constantly stirring with a spatula, let the chocolate melt. Remove the bowl from the pan.
Using a fork, dip each truffle in the chocolate and tap off some of the excess chocolate. And place onto the parchment paper to set. .

Ingredients

For the filling:

  • 5 oz (140 g) dark chocolate (with 70-75% cacao)
  • ½ cup (80 g) dates, pitted
  • ½ cup (120 ml) full-fat coconut milk
  • ⅓ cup (90 g) almond butter
  • 2 tbsp Amaretto liqueur

For coating:

  • 5 oz (140 g) dark chocolate
  • 1 tbsp coconut oil

Instructions

  1. In a saucepan heat the coconut milk - it should become warm, but not very hot. Add the dates into the milk and, using a blender, blend until smooth.
  2. Melt the chocolate in a double boiler or in a microwave. If using the microwave method, stir well after each 15-second interval to make sure the chocolate isn't overheated.
  3. Pour milk/dates mixture into chocolate. Add almond butter, and Amaretto liqueur, and use a silicone spatula to mix well until smooth and glossy consistency.
  4. Cover a bowl with a layer of plastic wrap touching the top of the chocolate mixture and place it into the fridge for about 1 hour to set. The mixture should be easy to work with, it should not be too thick.
  5. Form the balls with your hands (about 0.5 oz or 15 g each) and put them back in the fridge for 30 minutes to thicken.
  6. To coat the truffles with chocolate glaze, melt the chocolate and coconut oil, using a double boiler. If you don't have a real double boiler, make it using a pan and heatproof bowl. Add finely chopped chocolate to the bowl. The bowl should be able to fit in the pan without reaching the bottom. Pour some water into the pan, place over medium heat, and bring to a gentle simmer. Then place the bowl into the pan. Constantly stirring with a spatula, let the chocolate melt. Remove the bowl from the pan.
  7. Using a fork, dip each truffle in the chocolate, and tap off some of the excess chocolate. Place onto the parchment paper to set. Decorate by drizzling the melted chocolate on truffles or dust with cocoa powder.
