This warm and cozy Creamy Potato Soup is a perfect way to warm up on a cold day. It’s a super easy, hearty, and healthy soup that is made in just one pot and tastes super delicious. If you are looking for a tried potato soup recipe for your family to enjoy, then this recipe is for you.
Ingredients to make Creamy Potato Soup
To make Creamy Potato Soup, we will need:
Potatoes. Use floury potatoes, not waxy potatoes for the best texture of the soup.
Onions. Use yellow or white onions for this recipe. Also, the leek is great for this recipe, it gives some interesting flavor here.
Olive oil. You can use any vegetable oil you want, as well as butter. It is needed to sauté the onions.
Broth. I prefer to use low-sodium vegetable broth. But you can substitute it with chicken broth if you want to.
Heavy cream gives a creamy taste and texture to the soup. Also, half and half can be used here, but I recommend adding heavy cream to get the best result.
Garlic. Freshly minced garlic gives the flavor. Use 2 or 3 cloves for this recipe.
Fresh thyme sprigs. Sprigs of thyme bring a great flavor to the soup. Don’t skip it, it makes a difference.
For extra flavors, add toppings, like croutons, chopped onions, thyme, or even bacon, they taste great with potatoes. Also, there is a great option to add shredded cheddar cheese into the soup at the very end, you will get even creamier cheddar potato soup.
How to Make Potato Soup
Making this creamy potato soup from scratch is a super easy and simple process, and it is made in one pot!
- Heat 1 tbsp olive oil in a pot over medium heat. Add chopped onion and cook until softened and translucent for about 4-5 minutes.
- Add garlic and thyme, and cook for a minute.
- Add chopped potatoes and vegetable broth, cover with a lid, and bring to a boil. Lower the heat to medium-low, and cook for about 20-25 min, or until the potatoes are soft. Season with salt and pepper.
- Using an immersion blender, blend the soup until smooth.
- Return to the heat, and stir in the heavy cream.
