The addition of feta cheese makes the burgers creamier at the same time adding some savory taste. If you avoid dairy products, choose dairy-free feta.

Oats help to bind ingredients together by absorbing extra liquid and give the burgers chewy, burger-like texture. You will need a quick cook type for this recipe.

Ingredients

  • 4-5 pcs. young beets
  • 150 g quick cook oatmeal 
  • 1 small onion
  • 150 g feta cheese
  • 2 garlic cloves
  • 2 tbsp olive oil for frying
  • 2 eggs
  • a handful of parsley and cilantro, chopped
  • salt and pepper to taste

Instructions

  1. Peel and grate beets, onions and garlic. I use food processor for this step.
  2. Place gated veggies in a bowl with 2 tbsp. olive oil, eggs and oatmeal and mix thoroughly. 
  3. Add crumbled feta cheese, chopped parsley and cilantro, salt and pepper. 
  4. Mix all the ingredients and leave for 30 minutes for the oatmeal to absorb the liquid. 
  5. Form patties with your hands. If the mixture is very juicy, you can add a little more oatmeal ground in a blender. 
  6. Fry in a small amount of oil in a pan or on the grill. 

Notes

Alternatively you can bake them in the oven for about 40 min, flipping once halfway through cooking.
