Beetroot Burgers

Beetroot gives the burgers a nice texture and juiciness. If you don’t like vegetarian beans based burger patties that sometimes are a bit on a dry side, you’ll definitely like these Beetroot burgers.

The addition of feta cheese makes the burgers creamier at the same time adding some savory taste. If you avoid dairy products, choose dairy-free feta.

Oats help to bind ingredients together by absorbing extra liquid and give the burgers chewy, burger-like texture. You will need a quick cook type for this recipe.

Why include beets in your diet

Beetroot has an impressive nutritional profile. Beets are a great source of fiber, folate, manganese, potassium and iron. Also, it’s one of the biggest sources of glutamine, amino acid that is an energy source for immune cells. Beetroot is great for your digestive system, prevents constipation and improves digestion. Beetroots also contain antioxidants that protect your cells from damage. Red and purple beets are especially high in betacyanins that can lower the risk of heart disease. Eating beetroots can reduce high blood pressure and increase your energy. They are packed with many other minerals and vitamins. Also, beets are good in weight-loss diets, as they have low calories, but are filling and nutritious.

Beetroot burgers are bright, colorful, and delicious, being a great meat alternative! Serve it in a fresh burger bun and be creative with the toppings! Add mashed avocado or guacamole, some greens, sweet onion, hummus, or other toppings. These burgers taste really amazing!

  • 4-5 pcs. young beets
  • 150 g quick cook oatmeal
  • 1 small onion
  • 150 g feta cheese
  • 2 garlic cloves
  • 2 tbsp olive oil for frying
  • 2 eggs
  • a handful of parsley and cilantro, chopped
  • salt and pepper to taste

  1. Peel and grate beets, onions and garlic. I use food processor for this step.
  2. Place gated veggies in a bowl with 2 tbsp. olive oil, eggs and oatmeal and mix thoroughly.
  3. Add crumbled feta cheese, chopped parsley and cilantro, salt and pepper.
  4. Mix all the ingredients and leave for 30 minutes for the oatmeal to absorb the liquid.
  5. Form patties with your hands. If the mixture is very juicy, you can add a little more oatmeal ground in a blender.
  6. Fry in a small amount of oil in a pan or on the grill.

Alternatively you can bake them in the oven for about 40 min, flipping once halfway through cooking.
